Saint-Aubin 1er Cru “Fleurs de Côteaux” 2007, Thierry & Pascale Matrot

Bought from the domaine in 2012 as part of a vertical flight and cellared in Puligny until April this year, this Saint-Aubin 1er Cru from a small lieu dit has a medium yellow reflective colour which gives little hint as to its age. Lemon nose, a touch of white pepper, fresh apricot. Pine nuts. Salty. A small bouquet. Medium plus acidity which is very reflective of the 2007 vintage and underpins the longevity of this wine. Deep minerality. Structured finish but not savoury. Very lively. This is a sculpture without flesh. Too mature to score. And possibly the last bottle on earth of this wine!
