Chablis Grand Cru "Bougros" 2004, William Fèvre

Second wine in a six wine blind-tasting. Like the other mature wines on show, this has a medium yellow colour which doesn't give much away. The first nose indicates a significant amount of age: brioche, white truffle oil. Unstable. Definite tertiary aromas of creamy cheese like Chaource, leeks, daikon broth. A touch nutty. Primary flavour is cooked lemon, all the elements have melded together, medium acidity, saline, minerality but not mineral, at the end of its life but still very good. Above all, interesting. Scores 25/30 for a Chablis grand cru.
