Chablis 1er Cru "Les Vaillons" 2007, Moreau-Naudet
Courtesy of the Justerini & Brooks Burgundy 2007 tasting. This is an ultra-classic Chablis with elegant citrus aromas, splashes of white flowers like plum blossom (as in the photo) and hawthorn as well as intriguing notes of sweet grapefruit. On the palate it is really tart, linear and racy. One imagines this will evolve into a nervous mineral wine in 5-7 years time. Possibly too edgy for some?
