Chablis 1er Cru "Vaillon" 2005, Christian Moreau Père & Fils

This Chablis was tasted over lunch in the interesting surroundings of The Secretary's Room, in the original City of London School, which is now occupied by JP Morgan. Despite the youth of the wine it already exprsses excellent Chablis aromas of quartz, lemons and satsuma. Vinfied one-third in oak barrels in the mouth is thick, a little buttery with a gentle suggestion of vanilla fudge. A long finish, ripe citrus fruit flavours and good background acidity make this most tasty now with the potential to mature gracefully to 2011.
