Courtesy of the Justerini & Brooks Burgundy 2007 tasting. Like the 1er cru Vaillons from the same producer this Chablis is aged in large oak cuves which preserves the fruit and adds a tinkle of spice. This wine however contrasts with the Vaillons -- honeysuckle, orange, medium ripe fruit. Rounded, rich and softly spicy (cinnamon) on the palate with an enticing tangy ripe citrus fruit finish. A more crowd-pleasing wine than the rapier-sharp Vaillons.
